Step1 : Rinse the water spinach thoroughly—its hollow stems often trap dirt. Soak it in salted water for 5 minutes, then rinse clean. Break or cut into 2–3 inch segments, discarding any tough or woody stems.

Step2 : Heat oil in a wok or large pan over medium heat. Add minced garlic and stir-fry for about 10–15 seconds until fragrant but not browned. If you’re a garlic lover, save some to toss in at the end for a layered aroma.
